Apple Cinnamon Bites

I love nothing more than a snack ball. They are easy to make, easy to transport if you need to take them on the go and perfect for batch cooking so you have healthy snacks all week long. You can even freeze half to make them last longer.

Apple Cinnamon Bites

Makes about 12 snack ball

Ingredients

  • 1.5 cups of oats (or 1 cup of oats and 0.5 cups of ground almonds)

  • 3 apples peeled, cored and diced (option - if short on time or energy, just core the apple and add with the skin - it will give a different texture but is fine to eat)

  • 1.5 tsp ground cinnamon

  • 1 tbsp maple syrup

Method

1. Add oats, apple, cinnamon and maple syrup to a food processor and mix until it forms a smooth dough – it should stick together when pressed between fingers. If it’s too wet add more oats – too dry add more apple or splash of water

2. Roll the mixture into balls and place in the fridge to set – this will take about 30 minutes, store in a sealed box in the fridge for up to 2 weeks. Can also be frozen for up to 2 months.
